Damn, that's the first time I hear something which I can relate 100% to. I use the same techniques you described. And some other, too. Like fillwords for example. That really is the best advice. Keep calm, don't think about what you exactly want to say. Then it just pops out before you think "oh damn, I'm surely going to stutter on this one". Problem is, if there's just one way to say it. Like in your job. Sometimes you can't just talk around it, you have to say the word, or you will be just wrong with your point. That still really is a bit tough for me.
