This is something I know, but never put into practice. I need to work on it. What has helped me is something else I learned from watching him - the double inhale. Take a big breath in, and then breath in even further, then slow exhale. This helps me when I start to have bad anxiety and does actually calm me down. As you said breathing techniques can help our fluency tremendously.
