Any tips on how to stay cool during an interview?

Any tips on how to stay cool during an interview? I have an interview tomorrow morning and I think i'm ready, except for my fluency. It's pretty unpredictable (sometimes it's perfect, sometimes I can't even talk) and I want to keep a cool head during the interview so I don't start blocking up. What do you guys do before interviews, presentations, etc.?
