Because humans come in a huge range of variety, and a lot of the time those differences aren't actually problematic in themselves. The problem is society's expectation that everyone will look and sound completely "normal" (according to some preconceived idea of what that means). Why shouldn't a person who stutters be working in food service? Two possibilities: 1) Maybe OP's stutter is so severe that she effectively can't speak at all. Maybe even after trying everything they can think of to accommodate her and make it possible for her to do her job, her productivity is still lower than their other employees because of her stutter. This strikes me as very unlikely! But if it is the case then yes, I guess you'd have a point. 2) Far more likely, OP is doing a perfectly fine job and is helping her customers in an efficient, courteous and timely manner, but the restaurant is worried that their customers will be surprised by OP's disfluencies. Well, guess what, this is a great learning opportunity for the customers! It's good for them to encounter people who stutter in all areas of life, it will raise awareness and open their minds. Why should the restaurant be allowed to fire OP if she's doing a good job? Should people who stutter be erased from public view? (Hint: of course not). TL;DR People who stutter don't need to hide. The rest of the world needs to learn that some people stutter and that that's okay.
